Since German wines come from a marginal climate ( cool and damp where in some years the grapes won't fully ripen). This type of climate can produce wines that are high in acidity and low in alcohol. Even though many North Americans believe all wines from Germany are sweet and fruity believe it or not a lot are dry. Due to the climate in Germany if the grapes don't ripen the wines can be very sharp to the taste. It is legal for German winemakers to allow some of the Grape Juice to be left unfermented (in some countries like the US this practice is illegal). The unfermented grape juice provides the wine with some fruitiness and balances the acidity. Quality German wines tend to have a refreshing acidity, never a cloying acidity.
