Some cooks find they are able to replace part of all of the fat in cakes and cookies with mashed fruit, such as applesauce or prune puree. Other cooks find such substitutions are not acceptable. When baking bread, substitutions are more risky. But there are excellent fat-free bread recipes.

All fats can be removed from bread formulas and recipes; very good bread can be made with nothing more than flour and water, yeast and salt. Fat-free breads will have different tastes and textures than breads with some sort of fat, but they will still be proper bread.
