I compared a couple of nutrition labels and found that about 25-30% of those beans is carbohydrates, but according to the Live Strong Foundation, it's about 78% carb.

Since starch is a form of carbohydrate which is the main ingredient and there's only a little protein in there and not much else, I'd class it as a starch.
