In fact, most buffalo mozzarella that I've seen is NOT vegetarian. Rennet, derived from the stomachs of young buffaloes, is required for the curdling process. (The young buffaloes must be killed for their rennet to be extracted.)

You should check the ingredients and do some research on individual brands before buying, because not all cheeses are the same. Many mozzarella cheeses are made using vegetable, microbial, or other vegetarian-safe rennet or rennet substitute.

It depends on the individual. Some vegetarians choose to still consume dairy. In this case, all types of cheese are "suitable". For those vegetarians that do not consume dairy, then "true" cheese, made from animal milk, is not alright. Many replacement cheeses do exist, though. These are often made from rice milk, soy, beans, and such and do not contain any real dairy in them at all.

Most mozzarella cheese that you find in grocery stores and restaurants is made from the milk of cows, buffalo, or sheep, so it is not vegan. However, there are many brands of vegan cheeses that are becoming available that are made to be used like dairy mozzarella. Daiya is one such brand.

Mozzarella cheese, like all cheeses, is made from milk, in this case traditionally buffalo milk, so isn't truly vegetarian.
