Macaroni and cheese isn't the healthiest option but as long as there are other foods from the different food groups eaten along with the macaroni and cheese, your lunch won't be as unhealthy. Also using real cheese instead of processed cheese can make it healthier, as well as using whole wheat noodles.
Note: Your body does need carbohydrates, so macaroni provides your body with it's essential energy.

Personally I prefer a Macaroni and Cheese that includes a small amount of Bleu Cheese in the sauce, has crumbled bacon and some broken vienna sausages, and cavatappi pasta instead of elbow macaroni.
