Gelatin (which is what jello is) can be made out of bone, bovine hides, or pig skin. That's why some vegetarians won't eat it.
I believe jello used to be made of gelatin a component of collagen, to create the signature dessert. Beef bones (so cows) was typically used. The collagen found in bones and cartilage was used for jello as bone marrow has very little, mostly due to marrow being a site of red/white blood cell production and storage of fat.
