It is different for each brand but most brands are mostly fish pieces with lots of added artificial falvours, colours, preservatives and sugars. Some brands are like 40% soya bean too. Usually there isn't any crab in them at all (including oil), but some brands add minced crab (shell and all since that is cheaper). Basically it is very very processed.
Imitation crab is made from pollock Fish which are separated in a machine.
