It's countable... you can tell because it's plural ("french fry" is singular) and because you can count french fries (you can have three french fries). Something uncountable would be "gravel", because you can have a little gravel, no gravel, or a lot of gravel, but you can't have three gravels. (Technical details: Sure, you can count the individual stones, but then you would say "I have three stones of gravel here" or "I have three pebbles", not "I have three gravels". Physically, you can count gravel, but grammatically, you can't, because you can't say "three gravels".)
