Pumkin is just one type of squash. Each squash variety tastes different. Some a lot different and some not so much. Pumpkin is a fall or winter squash like Hubbard squash, acorn squash and others. Zucchini and yellow squash are summer squash. The summer varieties are similar to each other and the winter varieties are similar to each other.

I think you mean patty pan squash. Pattypan squash is a quick growing summer squash variety with a slightly nutty taste. In terms of their delicacy, they are more like zucchini, straight neck or crook neck squash -- they certainly aren't as hardy as acorn or spaghetti squash. You can steam, poach or saute them, much like zucchini.
About 6 minutes. Zucchini are in the summer squash family and aren't woody at all. It doesn't take much to cook them. Slice the squash thinly and serve them raw for a delightful alternative to cucumbers. Chunks of Zucchini will cook very quickly.
