Generally a "portion" is considered to be the same size as one of your hands balled into a fist. If you're eating more than that amount of meat in one sitting, you may be eating too much. This measure of a portion is true for all foods, not just meat.

Because bacteria grows faster when it's a bit warmer, and too much bacteria in the meat spoils it.
Meat and wheat are in completely different food groups. Neither are really considered healthier than the other since meat and grains are both important to a healthy life. As anything, too much of either can cause health problems. Too much meat intake increases your risk of high cholesterol, whereas too much wheat can lead to an increase in obesity since it is high in carbohydrates. Wheat should be avoided in people with celiac desease.
