If you shred the potatoes in a grater and then strain them through a potato ricer, then one loose cup of raw shredded potatoes weighs 4 ounces. One packed cup (as it is straight from the ricer) weighs 6 ounces. So if you need a pound of homemade hash browns, it will be about 7 1/2 cups of loose shredded potatoes, or 5 1/3 cups of firmly packed ones. You will need to pre-cook them before using them in a casserole.
It doesn't really matter what material you're dealing with, 16oz always makes a pound. And, technically, 16oz of shredded potatoes would make a pound of hash browns. Shredding hash browns would just give you...really shredded hash browns.

Something else?Bagged hash browns are usually sold by weight, so typical amounts would be something like "one pound" or "13.2 ounces" or something like that; look on the bag itself to see the net weight of the contents.If you're talking about hash brown patties (where "one hash brown" means "one patty"), then again, consult the bag itself. That is the correct spelling for "hash browns" (shredded and fried potatoes).
Hash browns are made from a rough mash of raw potatoes, perhaps with a little flour to bind it together, a little salt, then shaped and deep fried in oil. I would think KFC hash browns are much the same as any other.
