Only a day, maybe two at the most. Cooked refrigerated potatoes develop undesirable changes in flavor. The flavor as well as their consistency changes due to the starch in the potato. However, they are very good to make into potato cakes. MASH and add egg and flour and fry the as you would pancakes. Can add salt, pepper and whatever other herbs you prefer. You can also mash them into a mashed potato using chicken broth or bouillon cube dissolved in water, ( see directions of bullion) and freeze.

Most Food Safety experts say to not leave potentially hazardous food out at room temperature for more than 2 hours.

That's interesting to use the word 'fresh' when speaking of cooked food.

This food will only last a few days. 3 days in the refrigerator if the food is stored properly. Place in an air tight container for the best results. You can transfer the food to the freezer if longer storage is needed.

If stored in the proper conditions, potatoes should stay good for two to three weeks. To maximize that time, always store in a cool (45-50 degrees), dark place.
