Only a day, maybe two at the most. Cooked refrigerated potatoes develop undesirable changes in flavor. The flavor as well as their consistency changes due to the starch in the potato. However, they are very good to make into potato cakes. MASH and add egg and flour and fry the as you would pancakes. Can add salt, pepper and whatever other herbs you prefer. You can also mash them into a mashed potato using chicken broth or bouillon cube dissolved in water, ( see directions of bullion) and freeze.

Most Food Safety experts say to not leave potentially hazardous food out at room temperature for more than 2 hours.

That's interesting to use the word 'fresh' when speaking of cooked food.

This food will only last a few days. 3 days in the refrigerator if the food is stored properly. Place in an air tight container for the best results. You can transfer the food to the freezer if longer storage is needed.

If stored in the proper conditions, potatoes should stay good for two to three weeks. To maximize that time, always store in a cool (45-50 degrees), dark place.

How long does a parboil take?

This depends upon what you are cooking. If you are cooking a Boston butt roast, it may take 30 minutes. If you are cooking baby back ribs, it may take 10-15 minutes. The purpose of the parboil is to get the meat cooked through the center, thoroughly. That is very important with pork. Once the meat is cooked, not past the point of being done, it is usually put on a barbecue grill. There, the sauce is cooked onto and into the meat. Once the sauce is cooked on, the meat is removed from the grill and served fresh, hot, and everything is safely cooked.
