PICKLED BOLOGNA
Amount Measure Ingredient -- Preparation Method

1 c White vinegar
1/2 c Water
1/4 c White sugar
1/8 ts Salt
1 tb Mixed pickling spices
1 MD Onion, sliced
1 Ring bologna, cut into
-2-3 inch pieces
Mix together first 5 ingredients and boil for 8
minutes; cool. Put bologna and onions in large glass
jar. Pour vinegar mixture over bologna. Refrigerate
overnight before serving. Store in refrigerator.
You must start with cooked tripe. It takes 12 hours to cook (boil) or you can buy it already cooked. You can simply pickle it with a regular pickling recipe, but the quick way to do it is to make a marinade with half broth (from cooking it) and half vinegar and soak it for several hours. Look in http://www.nutritiondata.com/facts/beef-products/3483/2 Apparently, tripe has relatively low cholesterol, and a good distribution of saturated v unsaturated lipids etc. My own personal experience with tripe soup (an eastern Mediterranean staple) is that when I cook tripe, practically no fat globules float up to the surface to be skimmed.
