Suppose we need to cook 50 kg starch (with starch content 10%).Then we take 45 kg (parts) of water and 5kg (parts) of starch powder to be cooked.Recommended starch is tapioca or cassava (best one).
(1)Take a large steel or aluminium pan which can hold atleast 55 kg or more and put it on a heating stove.
(2)Take DM water or mineral water 45 kg and pour it in large cooking pan .Filter any water you take with filter cloth if necessary.Filtering can be done with any chemical filter cloth mostly bolting cloths or 60 mesh nets.
(3)Raise the temperature of the stove to not more than 75 degrees.You will realize this temperature of water in the stove with an industrial thermometer.
(4)As soon as the water temperature rises to 75 degrees turn off heating the stove and switch it off.Now your temperature is 75 degrees and it will drop slowly.
(5)Then , start your stirring machine or churner into the water which is hanging upside as a horizontal line on the stove.Position it correctly topmost or somewhat below on the top most layer of water and start the stirring machine or churner.Then , slowly add 5kg starch from a bucket into the aluminium stove and complete addition of 5kg starch into the water in just 1 minute or 2 minutes slowly so that no lumps or formed.After starch has been completely added keep stirring until temperature reaches 60 degrees.You will see that a white paste has been formed.
Note :
(1)Do not cook starch directly on a flame.As soon as the temp reaches 75 degrees turn off the heating.
(2)Position stirrer or churner correctly into water so that starch can be added easily and be stirred easily.
(3)Use final starch paste immediately within 2 hours.
(4)Starches are subject to micro-organisms so they need preservatives.
Preservatives for starches are :-
(1)Salt (Nacl) (Safe)
(2)Lemon Juice (Safe)
(3)Formaldehyde (Unsafe) (But, most effective)
(4)Sodium Triphosphate.
Starch Adhesive enhancing chemicals:-
(1)Acetic Acid (By adding acetic acid mixed into water in some percentage after the white paster has formed enhances the performance of starch white paste.)
