You should never throw it down the sink as that will only contaminate the enviroment. Some places have recycling centres where you can dump your used oil (e.g. Bacrcelona, Spain.) or you could make soap out of used oil.
Sorry I've no idea how to make soap out of old oil, but I'm sure it will be somewhere on the internet, if not on WikiAnswers.
2 things to answer here: getting it out of your pan and then getting it out of your garbage. #1 You could use newspapers or junk mail to fill a plastic food container or box. Pour the cooled grease into that, cover and trash it. The paper helps keep the oil from sloshing around. Newspapers are also handy to wipe out the bottoms of the pots of all the fried bits without wasting paper towels. OR, #2 you could pour the cooled oil into a jar or bottle. If you put the oil in the jars, check with your local garbage service. Some companies will tell you to put it out and they will collect it separately as a service. This keeps them from having to clean up oil messes on the roads when they turn the compactor on and the glass breaks. If you use alot of cooking oil, check to see if anyone near you has a biodiesel facility. There happens to be one close to me, and I bring my oil from fish frys over to them, no charge.
