∙ 12y agoPossibly. Some cheese has aluminum added so that it will slice more easily and melt more readily. The FDA does not require that the aluminum be listed as an ingredient.

I have been cooking pizza in a wood burning brick oven for several years and do not have a problem with the cheese burning and I cook at 800-900 degrees. However I only use fresh mozzarella packed in a brine or water solution. If you have been using low moisture cheese this may be your problem. Fresh mozzarella is more expensive but well worth it. You could use parmesan (although it doesnt melt as well) but I would not recommend using mozzarella as it is very different.
