You are supposed to churn above 60 dF, this was refrigerated, fresh (unpasteurized) cream.
I filled a quart jar 4/3 full and shook it while I watched the last half of the movie "Chitty Chitty Bang Bang". I had butter before the exit music.
The change is sudden and dramatic.

∙ 13y agoThey don't. They churn cream to butter. The cream is agitated until the milk fat separates from the cream and forms globules of butter. They are then strained out and formed into blocks. Sometimes salt is added for flavor.
