I see no problem in doing a pastry with self rising flour. It will be softer and more crumbly but that is the only downsides which are not to bad i like crumbly pastry personally.

No self rising flour should not be used in pie filling. The baking powder and baking soda in self rising flour would spoil the taste of the pie filling.
