Yes, olive oil is an excellent choice for chicken. Brush the empty crock pot with olive oil, then rub the chicken inside and out with olive oil. Rub with salt and cracked pepper if desired, and add whole sage and thyme inside the bird and between the skin and the flesh. Place any root vegetable such as onions, potatoes and carrots in the crock pot and set the chicken on top of the vegetables. Add half a cup of broth, white wine or water to the pot. Cook on low for 6 - 8 hours or until done. (you may cook on high for 1 hour, then on low about 5 hours or until done. )
