Cannola oil, or virgon olive oil seafood is best cooked at high temperatures so it's best to use oils that can take the heat. peanut oil is an eg of one as well as olive oil.
Chilling or freezing olive oil will not harm it and you can use it to continue cooking with at the appropriate heat temperature once thawed.

I am not aware of any recommendation to not store olive oil in large containers. Olive oil processors store the oil in huge vats, but the oil would be protected from light and heat. Perhaps at home, to delay rancidity, one should store the oil in the refrigerator and have only a small container available at room temperature for use as needed. Light and heat will affect the flavor of the oil.

Olive oil has more antioxidants and zero trans fat. if you are frying stuff at a high temperature you should use a vegetable oil but for general light sauteing use olive oil and use olive oil to replace butter when making rices and pastas - it is much better for you oh and if you fry at high temperatures with olive oil , just to clarify, it will start smoking and burn
