Puy Lentils are a particular type of green/blue lentil grown in the Auvergne region of France. Production of Puy Lentils are subject to the French A O C system regulating their production and naming. They have a distinctive flavour and importantly stay whole when cooked rather than turning to mush as many lentils do.
