Stuffing can be "pre-made" to a limited extent. Remember that the bread crumbs are dry and you'll be adding moist or wet ingredients to them to make the stuffing. Why not mix all your vegetables, seasoning, whatever and put it in the fridge overnight? Then just dump that and the stock over the bread crumbs when prep time comes. Will that work? Use a produce bag to hold all the wet stuff so you can just dump it over the bread crumbs next day. That way you don't have to chill a big bowl. Saves space and makes things easy. This author has done a lot of prep for cooking at a remote location and packed it just like that without problems. Yes. I always prepare mine the night before. First I sautee the onions and celery until translucent. Then add the mixture to the dry stuffing and add 1 egg and 2-3 jars of heated chicken broth, and any other seasoning I want. Mix it all together until you get the consistency you want and then cover and refridgerate overnight. Letting it sit overnight will intensify all flavors and allow the stuffing to absorb all that extra flavor so it doesnt taste like a cereal box.
