Thin slices of cucumber laid across cooked salmon (after it comes out of the oven) or dill weed are mild and enhance the taste of the fish. Ginger (small amount) is another spice that can be used. Coating the fish with a little low fat mayonnaise (not Miracle Whip) and then spreading fancy cracker crumbs on top with a touch of dill is good, or even sprinkling a little brown sugar on top of the mayonnaise. Ranch dressing or other such dressings along this line spread across the fish is also good. Sometimes just cooking the fish with a bit of sea salt and fresh ground pepper and some lime or lemon is a refreshing treat.
