This is a very good question. In fact, onions do not have a harvesting period. Onions do not have a specific season, becasue it is a vegetable. Usually, onions are picked when the onion bulb starts to peel off of the onion itself.

Since onions keep so well and since they can be used while their tops are still green or after they turn brown and collapse, onions are available year round and so are not considered seasonal.

Garlic is generally picked in summer time around July. You pick them with the bottom 3 or 4 leaves are dead and brown. If you pick them too late the outer shell that protects the garlic will have started to break down and the garlic won't store for long (still plenty good to eat immediately).

Onions are classified into two categories. Green onions or scallions and dry onions, which are mature onions. There are many varieties of onions and range from red to white to yellow. Some are classified by the pungency, hot and mild. Because onions are being hybridized it would be hard to know how many kinds there are.
