I've never heard of a Chinese fighting fish before, so you may mean a Siamese fighting fish. Another name for a Siamese fighting fish is a betta fish. Two major diseases that bettas get are Popeye and Swimbladder disease. Popeye is when a bettas eyes expand and then eventually blow up. Swimbladder disease is caused from poor diet. A bettas body expands, and may look bloated. Their scales may still out, and when this happens, saving them is pretty hopeless. Otherwise, most of these common diseases can be cured if spotted quickly.
Bettas can suffer from all the diseases that any other species of fish can get. The best way to avoid sickness is to stick to the basic rules of fishkeeping which are. :- 1 inch of fish needs at least 1 gallon of water. :- Every tank needs a permanently running cycled filter. :- Every tank need at least 50% of its water replaced every week.. If you follow the above rules and keep your Betta at around 78F your fish will stand a chance of surviving. If you fail in any of them I can guarantee that your fish will be constantly getting sick.
No, fighting fish (Bettas) are only interested in fighting with other fighting fish.
Of course they can. How else would we have fighting fish.
The scientific name for the Japanese fighting fish is Betta splendens.
Fighting Fish do eat each other so, yes

I don't think so.
Win what? be more specific. If you mean in a territorial dispute, an adult fighting fish will get eaten (literally) by and adult convict cichlid. but if the cichlid and the fighting fish are of the same size then the fighting fish would be at an advantage.
The fighting fish was origionally native to the rice paddies of Thailand and Cambodia
