Many fisherman will mount a salmon if it exceeds the normal length or weight of what is normally caught. My opinion is you can mount whatever sized salmon you want. For instance, my friend mounted a small salmon. When I asked why he told me it was his very first salmon he'd ever caught.

Salmon could range greatly in price given its species and location. If salmon is purchased in the desert, it could be up to 10-12 dollars for a single fillet. If near the harbor where they are fished, conversely, it would be no more than 5 dollars for the same size fillet.

I am not sure how big the average salmon is, but smoked it's normally quite nice in a bagel with cream cheese. Make sure it is cream cheese though; any solid cheese such as Cheddar or Red Leicester is too strong and will hugely over power the salmon, the cream cheese compliments it perfectly.
