The traditional message of a bouquet of long stemmed roses is, "I will remember you always." They can also be used to communicate to someone, "I still love you." And of course, a bouquet of long stemmed red roses is the ultimate expression of true love. They can represent a love that runs deep and is long-lasting. The number 11 actually means nothing. Either the florist shorted you a rose or added a rose unless the 11th rose was a different color than the rest of the bouquet. 10 roses mean perfection, and 12 roses mean "be mine". A single rose means love at first sight or "I still love you" unless of course the color is something other than red ex: yellow means friendship.
There is no set amount of roses in a bouquet. Everyone have different sizes of bouquet. It depends on the types of flowers you are using, or what kind of look you are going for. It also depends on the person..if you are a tiny person you wouldn't want to be carrying a huge bouquet or it would make you look even smaller (This would apply to a wedding of course). If it's going to be a bouquet in a vase or for an arrangement then it would depend on the vase/arrangement ...sometimes it looks good to overfill and overflow and sometimes it looks good with very few. If you are doing this on your own it is all up to personal taste...if a florist is doing it for you then don't worry about it! :)
Long stemmed roses are a symbol of wealth. The rose naturally blossoms on a stem about 6" long naturally. The beauty of the rose is accentuated by the length of a longer stem based on the pedestal principle. So the rose is forced to grow fewer roses by cultivation, putting more nutrient into the one rose rather than many. The side branches of the original stem are pruned away resulting in a very long stem. A long stemmed rose can be displayed in a taller vase, as tall as 24" and still be spectacular. The long stemmed rose usually has a larger bud which results in a larger bloom. There are roses which will have a 3" long bud so obviously it is heavily cultivated and more expensive to grow. This is the reason for the wide variance in price. Miniature roses do not have the visual impact as the showy long stem variety. So it's not the rose itself, it's the money spent on the arrangement.

Tip: To save money (if you have too) don't buy long stemmed roses as you are paying for the extra length of the stem. You can buy roses with a sufficient length of stem much cheaper. Be sure to have the florist take the thorns off if they are not taken off when you purchase them.
roses will not live long if a lot of water is added only add water to cover half an inch of the bottom of the stem and a whole packet of flower food to have beautiful long lasing roses.

A long stem rose would generally be 70cm or more. If you are ordering a flower arrangement and want long stem, be sure to tell them that you were wanting stems at least this long. You might have to pay more depending on where you are sending them or ordering them, but if the height is that important to you, you won't mind. Also, if you just want the height and still want long stem, don't ask for the stem length, but instead opt for tall branches (or blooming branches if they are available) and roses with a collar of lemon leaf, rather than all of the leather fern and filler. Your arrangement will make a bigger statement and also have a contemporary feel.

A hybrid tea is a cross between two roses with one large flower growing on a long stem. Floribundas grow in groups of flowers and buds and aren't as large and beautiful as HT roses.
