It all depends on the girl. Some girls would find it immature if you call them sexy or hot and they would rather be called beautiful, pretty, amazing, etc. Though some girls would like it if they are called sexy and hot and those other words. Though you can always say to a girl sexy if your just joking around. It would get a laugh.
I think it depends a lot on how you say it and on who the girl is. If you really mean what you say, and be genuine about it, I doubt any girl would dislike it. If she acts like she doesn't like it, then it might just be because she is insecure or nervous. You can't really do anything about that.
