Growth does not stop when you are doing push ups, pull ups, or dips. Those are forms of exercise, which keep you healthier, and do not stop your growth.

Only if your spine is compressed. The chin-up will not increase the length of your bones, just relieve compression on the intervertebral discs. I've been doing chin-ups/pull-ups with added weights of between 20 and 100 pounds as part of my workouts during the past thirty years and have not grown any taller. The chin-up is a great exercise for strengthening and toning the back and arm muscles.
When you hold a bar, you can hold it firmly and wrap your palm around the bar. This would give you extra grip and leverage which you wouldn't get when trying it out on ledges. This is why, doing pull ups or chin ups in bars is easier.
