Depends what you mean by making joints "stable"... Heavy exercise (like say jogging) generally speaking damages joints. Light exercise (like say walking or swimming) don't cause any damage.

Exercise can help maintain muscles and tendons which are needed to operate a joint, but it doesn't improve the internals of a joint. Exercise is also known to improve co-ordination and balance which would make you generally more "stable".

If you want to improve the quality of your joints then make sure your diet includes the recommended amount of fish oils.
