Xsara don't use hydraulic clutch. It has a cable.

Use exactly what the manufacturer recommends and nothing else.
You are best to use a semi-synthetic oil. Preferably 10W40.

My local garage always uses fully synthetic on my Picasso (07 plate same engine), I know it costs more than other oils but as it is only changed once a year it's better to pay the price for peace of mind! Why skimp by using cheaper oil when it does such an important job, it is a no-brainer really.
Doesn't the C5 have the full Citroen Hydraulic suspension system? If so I'd expect the power steering system to be part of that, so it isn't topped up separately but fed from the main system for which you must use the genuine Citroen mineral-based stuff or a trusted alternative, because any of the "Conventional" types will ruin your fluid.
10,000 kms is the standard recommendation for europe. Use 5w40 synthetic oil, don't be a cheapscate. You can go 15,000 kms with no probs. Check your oil level once a month. Be happy.
