You need a cherry picker with a leveler bar to be able to take the engine and tranny out in one piece.
The rear main is accessed by removing the trans and flywheel. There is no need to remove the oil pan.
You need to rent a hoist. There are lift plates you can attach like a carb to the manifold. You should have a back up chain to a couple other bolts as a safety as well & use grade 8 only with washers. Once you unbolt the motor/trans mounts you can roll the engine towards you straight out the front. It is far easier removing core support than trying to go over it & removing engine/trans together easier than trying to attach trans to block in car.
You are going to need the engine, trans and transfer case ( I think ) engine mounts, possibly drive shafts, all engine electricals including the computer. Then its just a matter of removing the old stuff and installing the new.
You have to remove the transmission from the engine. This involves draining the trans of all trans fluid, removing the front wheels and unbolting the axels from the hubs, pulling the axels out of the trans, unbolting the trans from the engine, and then removing the clutch/flywheel/pressure plate assembly from the block. This WILL require air tools and probably will require some kind of torch... the flywheel bolts can be, and usually are, hell to remove. You'll need a Chiltons or Haynes manual for all of the torque specs when you put everything back together. The entire clutch installation process is highlighted in those magazines as well. If you're going to do it yoursel, the $20 for the manual is essential. You CAN get the trans out of the car without removing the engine, but this may be more work than just pulling the entire engine if you don't have access to a hoist for the car so you can stand under it.

Need differnet engine mounts, depending on what engine was in the trans am to begin with. It's not hard but good luck, it's time consuming.
Changing the clutch is a big job. If you don't have a lift and tranny jack I wouldn't recommend attempting the repair. If you have the right setup it does not require engine removal. However, you could remove the engine and trans together and then separate them outside of the engine bay. First, you need to remove the ball joints. This is done by removing the wheel and using a ball joint separator tool. Its a "U" shaped tool that fits underneath the ball joint boot. There is an air tool that can do this. Once you remove the ball joint, you need to remove the driveshaft from the hub. This is done by holding the hub assembly by the brake rotor and pulling towards yourself. The driveshaft may come out of the trans first so be careful not to damage the spline on either end of the driveshaft by dropping it. Once the driveshaft is removed, repeat this procedure on the other side of the front end. You need to remove the slave cylinder from the clutch fork. Two 10 mm bolts hold it on. Next, remove the shifter cables. Now with , you can start removing the trans bolts. First, support the trans from the bottom with the jack. Next, remove the trans to body mount. This bracket is located near the battery. If you look in front of the battery you will see it. Remove and check the jack. You may need to adjust the jack to support the weight of the trans. Next, remove the trans to engine bolts. Look for where the casing for the trans and engine block meet. You will find the bolts there. Remove all the bolts and the trans should start to move a little. With the jack supporting the trans, start to move the trans away from the engine block. Once you have separated the trans from the motor, lower the jack slowly making sure the trans is balanced on the jack plate. Get the trans to a stand or appropriate resting place to remove the clutch assembly.
It is easier to take the engine out the top with the transmission. You need to disconnect the trans from the axles and also disconnect everything else that will prevent the engine/trans from coming out. That includes, wires, hoses, etc. Once out, you can unbolt your trans from the engine and slide it out.
