Rodeos originated in the mid 1800s. All the way from Mexico to Canada, or wherever cattle and cowboys were. After a while, cowboys who raised cattle and worked on ranches would gather to show off their skills. Who could ride the unridable wild bucking horse would earn bragging rights as the toughest and handyest cowboy in the west. Such events as calf roping originated when a cowboy rode through his herd and spotted a sick calf, he would then rope the calf off his horse, dismount, tie the calf up (to prevent stress and injury) and then administer medicine or whatever the calf needed to become healthy. It is still a method used today. On big ranches, its easier to quietly ride through the herd and rope and doctor the calf, rather than gathering the whole herd and moving them long distances to put them in a corral and doctor the calf.
