Why doesn't air pressure crush an empty soft-drink can as you drive down the mountain?

The empty soda can is not sealed so air is free to enter and leave the can. As a result, pressure inside the can is the same as it is outside.

What happens if the air pressure in the throat and outside is less than the air pressure in your middle ear when you swallow?

If the air pressure in the throat and outside is less than the air pressure in your middle ear when you swallow, your eustachian tube may not be able to equalize the pressure properly. This can result in discomfort or pain in the ears as the pressure difference causes the eardrum to bulge inward. It's important to try to actively equalize the pressure, such as by yawning or chewing gum, to relieve this discomfort.

What happens to the current if the potential difference is stepped-up in an ideal transformer?

In an ideal transformer, if the voltage is stepped up by a factor of x, then the current is stepped down by a factor of x. The end result is that the power, P=VI, is not changed. Again, this is in the ideal case.
