Yes if you are writing then ahhhhhh can be used as screaming. A more effective scream is EEKKK!! or AHHHHH!! All caps is a generally used for people who are shouting. So if you use all caps to write AHHHHH! or EEKKK! Then people will look at it as screaming.
Correction: no-one writes a scream like that except in comic books. In written text, you would say that a person screamed, and perhaps describe the scream in all its blood-chilling detail. It is simply not possible to write a scream phonetically -- especially those super-sonic, high-pitched screeches of the average woman or child. Men might scream something like "ah" or "argh" (note that one 'h' is more than sufficient) but I've certainly never heard of anyone screaming "eek". That's the sound one makes at the thought of having to do something that one is not too happy with doing, not the sound one makes when screaming with fear or terror.
