i would probably try to take AP classes or more European and outside Studies classes

It is best to take the most AP classes you can handle. Colleges really like to see that you've taken challenging courses in high school, so try to take as many APs as you can.
You can take AP Chemistry, AP Biology, AP Physics, AP Calculus or similar courses, but this will only count towards your undergraduate college classes. In the United States, you have to complete at least three years' worth of undergraduate college classes and then take another four years of classes in vet school.
Calculus or AP Calculus
Relatively challenging, yes. You should be in college prep classes, but if you're not in AP classes, you're still probably okay. If you can do honors and/or AP in your best subjects, that's certainly going to help you.
There are more than 30 courses in many different subjects. Particular high schools, however might not offer certain AP classes. A student who desires to take an AP test, whose class is not offered at his or her school, can take it as long as they order that exam.
Get your college prep classes done and any AP classes in history and work on your writing and research skills.
I think that you should take honors and Ap classes starting your junior ear. Only once you have gotten use to the high school work. Then you also have to be prepared mentally so that you can agree with your self before your teachers. They will tell you lots of things if your grades are excellent. But sometimes grades are not going to make a difference if your not ready mentally.
Gifted classes are for those who either have certain conditions that need to be met or are considered quite smart for their age. AP, or advanced placement, classes are more or less classes preparing you for an advanced level of work. AP Calculus or AP Biology prepare you for college and have the chance to give you credit for the courses, this way you won't have to take them during your enrollment in college.
At a minimum, I recommend AP Calculus.
