There are three alphabets in Japanese. Hiragana: うちは Katakana: ウチハ Kanji: This depends entirely on the context. Kanji can be mixed and matched together to create all sorts of words. For one word there can be hundreds of different Kanji combinations. If you were looking for 'Uchiha' as in the name of the Naruto antagonist then I'm afraid you're out of luck because there has never been a kanji representation of the name published so nobody knows the right characters. I don't think there is any kanji for the 'uchiha' as in fan either.

I believe 'hichigo' is a fan-made term (portmanteau) for Hollow Ichigo. It's definitely not Japanese so even if you have to write it in Japanese you would write ヒチゴ .
