Disodium phosphate is used in cream of wheat to quicken cook time, as described on the ingredients panel of the product package. While I would not say it is healthy, per se, it does not appear to be overly harmful, as pure Na2HPO4 in contact with eyes or skin may cause minor irritation. Inhalation of dust may cause coughing and sneezing. Inhalation may cause respiratory irritation. Ingestion of large amounts may cause gastrointestinal irritation including nausea, vomiting and diarrhea.
