Late harvest wine is when they harvest wine at a certain time after normal harvest, the latter you harvest the higher the sweetness of the resulting wine. This could take place 5 months after the usual harvest date. Ice wine is a form of late harvest with a stipulation! The temperature must be a few degrees below freezing (legally it is -7 Celsius for Germany and -8 Celsius for Canada). One the grapes are pressed the sugar rich liquid is used to made the wine whereas the ice crystals are left in the press.
