The study of wine and winemaking is called oenology. Oenology involves understanding the chemical and biological processes that occur during winemaking, as well as the characteristics and flavors of different wines.

The wine manager or wine steward who is found in a restaurant is a sommelier. An expert in the scientific study of wines might be called an oenologist, while the study of the various aspects of wines and wine making is the science of oenology. (The spelling of oenologist will vary somewhat, with the "o" often being dropped in the US.)The sommelier is the "wine expert" that we most commonly encounter. S/he will buy, store, rotate and serve wines, and will consult in all matters involving selecting an "appropriate" wine (sometimes called pairing) for a given entrée. The enologist (US spelling) will be an expert in what happens from the time the grapes come in from the field to the time the wine is uncorked. (Vinticulture, a separate area of study, deals with the growing and harvesting of grapes.)
The study of wine making is commonly referred to as enology. Courses on this study can be found at select schools on the West Coast of the United States such as Fresno State and U.C. Davis, which also have a viticulture program as well. Non-scholastic options include sites such as Decanter.
