Whiskey is any alcohol distilled from grain MASH. Bourbon is a whiskey that is made from a grain mash containing a minimum of 51% corn (although virtually all bourbons are made from at least 66% corn), aged for at least two years in new charred oak barrels, and with an alcoholic content no more than 80% (160 proof). A common misnomer is that there cannot be more than 79% corn in a bourbon - this is inaccurate.

The distillery itself does claim that Jack Daniel's is not a bourbon because it is charcoal filtered (see http://www.jackdaniels.com/faq.aspx ), but this is irrelevant, as there is no such legal stipulation and there are other bourbons that are charcoal filtered as well.

Bourbon is a type of whiskey that meets certain legal requirements. These vary somewhat from country to country, but the basics are: must be produced in the US; must be made from a mash that is mostly (51% or higher) corn (maize); must be aged in new, charred-oak barrels.

Jack Daniels Tennessee Whiskey meets the legal requirements to be labelled "bourbon", and the company could market it that way if they wanted to.

However, Jack Daniels performs an extra step (filtering it over charcoal) that is neither legally required nor prohibited for bourbons, and market it as "Tennessee Whiskey" instead.

So, yes: you could use Jack Daniels in place of bourbon if you wanted to. The flavor probably won't be identical, but then the flavor of any two brands labelled "bourbon" wouldn't be identical either.

neither, Jack Daniels is Tennessee Sour Mash, a Whiskey that is similar too but distinct from Bourbon.

No if we could only get that through the heads of U.S. airlines, it causes me no end of annoyance when flying and I ask from Jim Beam and the flight attend

No, the reason is because before aging Jack Daniels goes through a charcoal filtering process using sugar maple which is considered an additive.
