There were a number of soft drinks during medieval times and later, which were slightly carbonated from a small amount of fermentation, much as root beer is made in the home today. A drink like lemonade was developed in the 17th century. Carbonated drinks were invented in England in the 18th century. The first soda fountain was opened in the United States in 1806, and before the introduction of bottled soda, drinks very like it were being mixed to order at the fountains. The crown cap was invented in 1892, making it possible for people to drink bottled soda at home.
The list of soft drinks at Wikipedia missed Shweppes, somehow, but there is an article on the company, at which the tonic water is said to be the oldest soft drink, available since 1771.
