Well, actually they don't. Or at least the ones I know don't. They mask the smell of other odors, but they don't actually absorb the other odors. However, they may absorb the smell of some items if they are set outside and allowed to dry for awhile, but... the general rule of deodorizing agents has to do with the ability of something to oxidize something else. Most cleaning agents are oxidizers like bleach, ion air cleaners and oxi clean (some are not ajax etc.). The idea is that something that smells bad like rotten food is releasing small molecules of itself into the air. Molecules are just chains of things. To stop the smell, the chains must be broken or "captured". Oxidizers like chlorine and oxi clean do this by breaking the chains up. The chains are held together by electrons, which the bleach, chlorine, ion air purifiers etc. take. Once a chlorine atom takes the electron away, the chain (molecule) breaks down into smaller items that don't smell bad. Walla, no more bad smell. (This is just one way bad smells are dealt with). Carbon filters work in a different way, I'll let someone else explain that.
