Witches do all the things an average person would do. Apart from that witches celebrate the cycles of nature.
Among Witches there are special greetings. Some of them are "Merry Meet!", "Blessed Be!", "Brightest Blessings", "Love and Light" and so many...
Well, the short answer is: What don't we do? As long as it "harms none" we can make a ritual about it, lol.
In all seriousness though, the short list of rituals observed by most witches is as follows:
1. Samhain (Halloween) which is our new year, when the earth begins her slumber through the winter.
2. Winter Solctice
3. Imbolc (mid-winter)
4. Spring Equinox
5. Beltane/May day (mid-spring)
6. Summer Solctice
7. Lummas (mid-summer)
8. Autumnal Equinox
9. New Moon
10. Full Moon
A few more less common ones (simply meaning the occur less often the the others)
11. Handfasting
12. Handparting
13. Wiccaning/Birth rite
14. Crossing the bridge (funeral)
15. Initiation into coven
