Your body needs fiber to properly digest food. There are two kinds of fiber, soluble and insoluble. Both come only from plant foods and all plant foods contain some of both. Although different plant foods contain different amounts of each and in different ratios.
Insoluble fiber is totally non-digestible. What it does is attract water to itself. This adds bulk and softens stool which allows better digestion to occur in the lower intestine. Insoluble fiber is found in the bran coverings of most grains (whole wheat, brown rice) and the rind or peel of many fruits (apple, plums, peaches, etc.) as well as in all structural components of plants (stems, etc.)
Soluble fiber is fermentable in the lower intesting, which creates more nutrients and vitamins. Eating enough soluble fiber is also shown to increase lower intestine health prevent lower intestine problems as well as increasing over all health. Grains and fruits are again a great source of this sort of fiber, but this time we are looking at their insides and not their outsides. Oats, beans and fresh fruits are all excellent sources of soluble fiber.
Another bonus to fiber is that it keeps you feeling full longer. This can really make a difference if you are trying to eat less. Try snacking on apples, carrots, oats, lentils and other fiber-rich foods and you won't be hungry again 20 min later.
