They're not the only ones, rice is one of the main products in Arkansas, California, and Texas, just to name a few. It's served in any restaurant in the US (unless they're so removed from civilization that they don't receive fresh supplies from the truckers). It appears to have some medical benefits in defeating cancer, according to some sources; it's a filling, inexpensive, easily mass produced type of food.
You'll notice that rice is one of the ingredients for some popular American made beer. Some veterinarian articles, using a 20 something year old dog as an example, pointed out that it's primary diet had been brown rice mixed with some other vegetables, etc., being responsible for it's long life; hinting that it may have combated cancer. (Emphasis was on the word "hinted").

It is very general to say that Chinese people eat rice with their meals every day. It depends on the region of China and the specific family or people in the home as to whether they eat rice with every meal. Just as Americans are generalized in saying they eat apple pie and hamburgers, Chinese people are generalized in that they eat a lot of rice. Though hamburgers and apple pie are a big staple in many American homes, they do not generally eat those foods daily. This is true as well for Chinese people. As the world changes at a rapid pace, so does the food Chinese people consume daily. Though many Chinese people may eat rice daily, it is not true that most Chinese people do.
