They are important because in foods, if you do not have aditives, then you are not getting all of the nutrients you need. Additives send you plenty of fiber and nutrients. If you are not getting the fiber and nutrients that you need you can get very sick.

Fiber is not nutritious but none the less and important part of the diet. Sugars fall into the simple carbohydrate category, not as healthy as the complex category (think oatmeal). Many people think of vitamins and minerals when the think of nutrients, these are called micro-nutrients.
