Do not place cold eggs, straight from the fridge, directly into hot water. It might be best to put them cold water and bring the water to the boil while the eggs are in the water. Another option: do not cook them at too high a temperature - water should be simmering, not boiling.

The thickness of eggshells depends mainly on the food the chicken was fed. The better food for chickens will make the eggshells thicker. Cheaper foods or an incorrect diet will make the eggshells thinner and more easily broken.

Hard-boiled eggs don't crack as easily as fresh eggs because they have a solid inside (the cooked egg) which in a way protects the shell from breaking. Fresh eggs can be more easily broken because the inside is liquid, therefore not lending as much stability to the outer shell.

Because the shells are slightly permeable to air. However, eggs often crack while cooking, because the air inside may expand faster than it can pass through the shell.
