The egg shell is not liquid so the inside is the only thing that changes.

Egg Shells *WILL* dissolve in Vinegar. When you drop egg shells in to the vinegar, you can immediately see bubbles appear as the Acidity of the liquid takes effect. Calcium Carbonate (Egg shells) reacts with the vinegar to form Carbon Dioxide.

Calcium Carbonate is *NOT* soluble in water, boiling or not.

Try it.

Immerse an egg completely in vinegar for around a week, all that will be left is the Yolk with the protective membrane.

It's because the yolk and white of the egg, are cooked within the shell. When that happens, the "inner egg" contracts and gets harder; so the shell, when you hit it with something, has a wall, albeit a soft one, to push against, and that is what makes it easier to crack.
