Thick pot bottoms distribute heat better because the heat spreads in a uniform manner. When the bottom of the pot is too thin, the heat of the flame immediately penetrates in that one spot, possibly resulting in burnt or unevenly cooked food.

β 8y agoThe flat bottom does two things for you: makes it easier to transfer heat into the food in the pan, and keeps the pan from falling off the burner.
